Marinate the Mutton:
In a bowl, combine the mutton pieces with ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Mix well, ensuring the spices coat the mutton evenly. Allow it to marinate for at least 30 minutes to enhance the flavor.
Heat the Oil:
Heat oil in a deep-bottomed pan or pressure cooker over medium heat. Add the finely chopped onions and sauté until they turn golden brown. This caramelization will add depth of flavor to the curry.
Add the marinated mutton to the pan and mix well with the onion and tomato mixture. Cook the mutton on medium-high heat until it changes color and starts to release its juices. This process may take around 10-15 minutes.
If using a pressure cooker, transfer the partially cooked mutton to the cooker and add enough water to cover the mutton. Close the lid and pressure cook for about 5-6 whistles or until the mutton is tender and cooked through.
Once the mutton is tender, reduce the heat to low and simmer the curry. Add garam masala and adjust the seasoning if needed. Allow the flavors to meld together by cooking for an additional 5-10 minutes.
